Winemaking Techniques
Harvesting occurred at optimal ripeness when the grapes were between 24 – 25° Balling. Picking was done in the morning, and only the best grapes were selected. Sulphur was used to protect the grapes from oxidation during transportation.
Fermentation lasted for 10 days at 23 – 25°C. After fermentation, the wine underwent malolactic fermentation in a stainless-steel tank. After malolactic fermentation the wine was racked and matured in French- and American oak for 8 months.
Vineyards
The vineyards are found in a variation of meso-climates, exposed hills, and sheltered valleys, with soils from Granite, sandstone soils and clay. Grapes are picked from a selection of these different wards.
Vintage Conditions
The 2022 season will be remembered for the initial cool weather conditions that made ripening very slow. Phenolic ripeness occurred later and that lead to longer maturation time in the vineyards, creating exiting wines that are full and complex.
